It would have been my Nan’s 95th birthday yesterday. She passed away last year and I still miss her everyday. We had a great deal of fun together and I feel incredibly lucky to have had her in my life for so long. This is the cake I made for her on her 90th birthday.

Old-Fashioned Sultana Cake

450g sultanas
0.75 cup water + 0.5 cup sherry
225g butter
1 cup sugar
2 teaspoons cornflour
0.5 cup cold water
3 eggs
1.5 cups plain flour
1.25 cups self-raising flour
pinch of salt
whole blanched almonds, to decorate

Preheat the oven to 180°C and line a 20cm diameter cake tin with foil.

Boil the sultanas in the water and sherry until all the liquid has been absorbed, then leave to cool. In the meantime, beat the butter and sugar until light and creamy, and add the cornflour which has been mixed with the half-cup of cold water. Add the eggs one at a time, beating well after each addition.

Sift the flours and salt together and gently fold into the creamed mixture. Finally, add the sultanas and mix lightly but thoroughly. Pour into your prepared tin and decorate the top with almonds. Put on a low shelf in the oven and cook for 2 hours. The cake is done when a skewer inserted into the middle comes out clean.

Cut yourself a slice, sit down with a cup of tea, put your feet up, enjoy.
