No recipe to share as yet, but I am working on developing the ultimate dairy-free éclair. It’s going to be spectacular. Today’s first effort pictured above.

I do like a challenge.

I will happily test this for you when you have the recipe perfected.

Being a full blooded, full dairy, full meat eater…. erm…. Half English half Frenchman I believe I can offer an opinion on whether the recipe does indeed coupe le moutarde!

Ummm…..dairy free? The mind boggles. How does one make choux without butter? Or at least, choux that doesnt tate like it’s been dragged through an exhaust pipe? 😀 I await details…….and don’t come at me with your partially-hydrogenated fats!

Any news on the choicolate egg front?

When one doesn’t have the option of using butter these things become entirely doable! Recipe is on its way, just need to perfect the filling.

Easter egg mould procured… Now to decide on my flavourings. Watch this space 🙂
