There are days when this is the only breakfast that will entice me from my bed. It proved the perfect antidote to this morning’s lacklustre sky and sombre drizzle. (Yes folks, it’s summer in England…)

Perfect Porridge

0.25 cup jumbo porridge oats*
0.75 cup soya milk* (Marks and Spencer own-brand is my current favourite)
golden syrup for drizzling
handful of seasonal berries

Put the oats into a small saucepan, add the milk and bring to the boil over a low heat. Simmer for around 5 minutes, stirring continuously. (I find this provides a good opportunity for collecting your thoughts in preparation for the day ahead, or for some aimless daydreaming…you decide.)

When the porridge reaches a nice creamy consistency, remove it from the heat, pour into your favourite bowl and top with syrup and berries.

Mmmm… As Goldilocks would say, this is just right.

*I’m not a huge breakfast eater – if you are, you might want to increase the quantities. Just make sure you stick with a ratio of one part oats to three parts milk and you can’t go far wrong.

Top tip: soak the saucepan as soon as you’ve finished cooking, it will make the task of washing up much less arduous!
